There are two types of food establishments in Cuba, state-run and private eateries
                 called Paladares, also known as in-home restaurants. In Vinales the food and service
                 at Paladares are generally very good. Check out Paladar La Pimiente for lunch, and my   Fields and colorful houses abound in

                 favorite restaurant was Tres Jotas ‘3J’ Tapas Bar with fun owner Salvador who made
                 me his first dirty martini!

                 Although Spain and Africa contributed most to Cuban cuisine, traditional dishes gener-
                 ally lack seasonings and sauces. The most common meals include those made with
                 pork, chicken, rice, beans, tomatoes, and lettuce. Hot spices are rarely used in Cuban
                 cooking. Fresh seafood is abundant and lobster is so popular it’s becoming endangered
                 in Cuba.
