Into the Countryside
A fter Galway, my husband and I headed north
toward Derry where his relatives once farmed
44 acres. Along the way our food adventures
continued with stays in three resort hotels that combined
luxury lodging and park-lush settings with the inspired
farm-fresh dining we had come to expect in Ireland.
None was more quintessential than the 600-acre
Lough Erne Resort in Enniskillen. With views over Fer-
managh Lake where swans glide, its two pristine golf
courses have challenged celebrities and presidents, most
notably when the complex hosted the G-20 summit five
years ago. For food lovers there’s the added appeal of
Chef Noel McMeel’s deft hand in the kitchen.
